What you will need
Preheated oven to 180°C (350°F).
Medium loaf or cake tin or glass
Ingredients:
2 overripe bananas
1.5 cups almond flour
1 tsp baking soda
1/4 tsp salt
8 tbsp extra virgin olive oil
0.5 cup raw brown sugar
2 large eggs (or 2 flax eggs for a vegan option: 2 tbsp ground flaxseed mixed with 6 tbsp water)
1 tsp vanilla extract
1/4 cup oats and your favourite nuts, chopped
Instructions:
Preheat your oven to 180°C (350°F).
If making the vegan version, prepare the flax eggs: In a small bowl, mix 2 tbsp of ground flaxseed with 6 tbsp of water. Let it sit for a few minutes until it becomes gelatinous.
In another bowl, mash the bananas with a fork until smooth.
In a separate bowl, mix the almond flour, baking soda, and salt.
In another bowl, whisk together the olive oil, raw brown sugar, eggs (or flax eggs), and vanilla extract until well combined.
Add the mashed bananas to the wet ingredients and mix well.
Gradually add the dry ingredients to the wet mixture, stirring until the batter is smooth and the flour is fully incorporated.
Pour the batter into a greased loaf or cake tin.
Sprinkle mixed oats and chopped nuts across the top.
Bake in the preheated oven for approximately 60 minutes. Check for doneness by inserting a thin knife into the centre; it should come out clean.
Once done, cool the banana bread on a wire rack. Wait until completely cool before slicing.
For a lower-carb version, you could consider the following modifications:
Replace the raw brown sugar with a low-carb sweetener such as erythritol or stevia.
Use fewer bananas or replace part of the banana with unsweetened applesauce or pumpkin puree, though this will alter the flavour and texture.
